The cooks meeting will be at the stage starting at 9:30 a. m.  Preparation can start immediately after the cooks get set up so you have plenty of time.  We will announce when to start cooking.  Take a break for the cooks meeting.  See the ICS rules and regulations page on this website.  Click on the red letters.

DO NOT GIVE TASTING SAMPLES TO ANY JUDGE.  THEY WILL HAVE A RIBBON STATING THEY ARE JUDGES!

JUDGES!  DO NOT ASK FOR SAMPLES!  THIS DISQUALIFIES YOU AS A JUDGE!  I guarantee that judges will get all the chili they want during the judging process.

People's choice tasting samples WILL NOT be handed out until 12 noon.  At that time serve it up until it is gone!  Be sure you have a canister on your table/booth with your booth number on it.    Do Not hand out samples unless the person requesting the sample puts a ticket into your canister. This canisters will be turned in at 4:30 p. m. for tallying of the tickets.  When you run out of chili to hand out please bring your canister to the judging area and hand it to a staff member.  Remember you must have 2 gallons of people's choice chili but you are not limited to 2 gallons.  The team with the most chili will probably win the people's choice category as the canister with the most tickets wins the People's Choice award.  Two gallons of chili with beans or pasta in it is the minimum amount of chili required to enter the People's Choice category.  People's Choice Chili MUST have beans or pasta in it.  This chili can be prepared at home.  All you have to do is warm it up for serving at NOON!

All ICS contest chili RED & VERDE  MUST BE COOKED IN FRONT OF EVERYONE ON THE COOK OFF SITE.   NO BEANS OR PASTA IS ALLOWED.

However, with the People's Choice chili, if you wish to bring 2 gallons or 5 gallons it is your choice. The person serving the most for the longest period of time will get more tickets in their canister.  This increases ones chances to win this award. Bring as much over 2 gallons as you wish as the money made from ticket sales for tasting People's Choice chili all goes to our charity "Teach the Children."  Check the rules and regulations!

The "Teach the Children" charity is solely administered by KRGV NEWS CHANNEL 5 out of Weslaco, TX.  Channel 5 will be filming the cook off.  All you cooks have on your best face on your chili head and set up your best booth. You will be on Camera!  This film will be edited and a brief program will air during the "Teach the Children" telethon.  This will air the last Sunday in June.  Check your local TV channels in the Rio Grande Valley.  It is News Channel 5!

Salsa is turned in at 11:00 am.  CHILI VERDE cooking starts at 10 am---with turn in at 1 p.m.---RED CHILI cooking starts at NOON---with turn in at 3 pm.   Salsa can be purchased and doctored any way you see fit or made at home and brought to the cook off.  The red and Verde must be cooked from scratch in front of everyone.

Judging starts as soon as all the judging cups are placed on the preliminary tables.  The Judges meeting will take place 30 minutes before turn in time.

The announcement of the winners of all categories will be announced between 5:30 p.m. and 6 p.m.  In the meantime enjoy the entertainment and have a beverage of your choice. You have had a tough day slaving over a stove.  Relax and enjoy the view while listening to the music.  Many of our local musicians will be donating their time for this very good cause.  Please GIVE IT UP for the entertainers.  These musicians probably played until 2 am the night before and came out here to entertain the Chili Head crowd.  They will probably be playing that night in one of the local nightspots.  So please show your appreciation by GIVIN' IT UP for these musicians.  Make them feel appreciated.

As the International Chili Society's retired chief  judge Mr. Fred Wieland always proclaims at all events that he has overseen, "If you don't have a good time today, it's your own damn fault!"
